Madbrød (Matttbrød)

This is how make madbrød. Matt made is many times, so it is often called Mattbrød

All ingredients except water should be organic.


  1. 50 g of butter

  2. 2 dl of milk

  3. ½ dl youghurt/ Acido

  4. 25 g yeast

  5. 1 teaspoon of sugar

  6. 1½ teaspoon rosemary (or oregano)

  7. App. 350 g of wheat flour

Melt the butter in a pot and add milk.

Put the mixture in a bowl and add youghurt/ Acido. Stir the yeast into it and add salt, sugar and most of the wheat.

Beat the dough to get it into one lump.

Put the dough on the kitchen table, where some flour has been spread. Knead the dough thoroughly. The rest of the wheat may be added, if needed (The dough is too wet).

Make a round ball of the dough and roll it with a roller into a 28 cm diameter round pancake.

Put it onto baking paper and cut it nearly through into 8 pieces (triangles).

Brush it with milk and spread rosemary or oregano on the top.

Put the bread into a cold oven and bake it in at 225 degrees for 20 minutes.

After baking let it sit for 2 minutes before you eat it.



Good with smoked salmon. Or as bread to a soup.
